Zirvak debate: when exactly do you add the water?
After the carrots sweat down, or the moment they go in? Samarqand vs Tashkent osh seem to split on this. Settle it for me.

Just got a 12-liter cast-iron qozon. Walk me through the oil burn-in so the first osh does not weld itself to the bottom.
